  • 1 – PREHEAT THE OVEN TO 325 DEGREES. PUT THE BUTTER, GARLIC, HORSERADISH, THYME, ROSEMARY, AND SAGE INTO THE BOWL OF A FOOD PROCESSOR AND PROCESSS TO A PASTE.
  • 2- STAND THE RIB ROAST FATTY SIDE UP IN A VERY LARGE, STUDY ROASTING PAN. SEASON GENEROUSLY ALL OVER WITH SALT AND PEPPER. SPREAD THE HORSERADISH-HERB BUTTER ALL OVER THE TOP OF THE ROAST. ROAST THE BEEF UNTIL IT IS MEDIUM RARE OR UNTIL THE INTERNAL TEMPERATURE OF THE MEAT REGISTERS 130 DEGREES ON A MEAT THERMOMETER, ABOUT 3 1/2 HOURS.

PROPERLY BROWNING THE BUTTER MAKES ALL THE DIFFERENCE.   1. BASIC CREOLE SPICES:

  12. PUT THE MILK INTO A WIDE DISH. PUT THE FLOUR AND CREOLE SPICES INTO ANOTHER WIDE DISH AND STIR TO COMBINE. SEASON THE FISH FILETS WITH SALT AND PEPPER, DIP THEM INTO THE MILK, AND DREDGE IN THE SEASONED  FLOUR.
  13. MELT 4 TABLESPOONS OF THE BUTTER IN A LARGE SKILLET OVER MEDIUM-HIGH HEAT. SWIRL THE SKILLET OVER THE HEAT SO THAT THE BUTTER MELTS EVENLY AND COOK UNTIL THE BUTTER TURNS BROWNISH, 5-7 MINUTES.   • 1 SMALL PACKAGE FRESH MUSHROOMS, SLICED- SALT AND PEPPER TO TASTE, HOT SAUCE
  • ENOUGH WATER TO COVER DUCKS
  • PREPARATION:
  • TRADITIONALLY: THIS RECIPE IS COOKED IN A LARGE BLACK IRON POT OR DUTCH OVEN. CLEAN THE DUCKS AND CUT THEM INTO PIECES. SALT AND PEPPER TO TASTE. POUR OIL INTO POT AND COOK DUCKS IN OIL UNTIL WELL BROWNED. SAUSAGE CAN ALSO BE BROWNED AT THIS TIEM. REMOVE DUCKS AND SAUSAGE AND POUR OFF MOST OF THE OIL FROM THE POT. BROWN ONIONS AND SHALLOTS IN REMAINING OIL UNTIL TRANSPARENT AND WELL BROWNED.
  • RETURN DUCKS AND SAUSAGE TO THE POT WITH THE ONIONS AND ADD ENOUGH WATER TO COVER THE PIECES. BRING TO A BOIL OVER HIGH HEATH. AFTER WATER STARTS TO BOIL,K TURN THE HEAT DOWN TO A MEDIUM HIGH FIRE. COVER POT AND COOK FOR 2 1/2 TO 3 HOURS OR UNTIL MEAT PULLLS EASILY FROM THE BONE. THE GRAVY WILL THICKEN AS IT COOKS DOWN, SO ADD WATER AS NEEDED.
  • ADD: SALT AND PEPPER AND HOTSAUSE TO TASTE AS THE GRAVY COOKS DOWN. DURING THE LAST HALF HOUR OF COOKING, ADD THE GREEN PEPPERS, PARSLEY AND MUSHROOMS TO THE POT.
